My Famous Mexican Street Corn
Summertime calls for some delicious staple recipes loved by all your friends and family, and perfect for barbecues. Every time I have a large gathering my go to cuisine is MEXICAN! Especially during the summer months! It's such a nice, easy, a yummy cuisine to prep for everyone, and who doesn't love chips, salsa, and guacamole while lounging it by the pool?!
Today, I won't be discussing how to make tacos or guacamole (even though I have an insanely delicious guacamole recipe) I will however, be sharing my famous Mexican street corn recipe. There are so many different ways to make this recipe, but I do have to say that mine is my favorite! Ha! OHh and I do make it off the cob so it's easier to eat.
WHAT TO BUY
5 cans (15 oz.) Whole Kernel Corn (you can buy white or yellow, I actually like to mix them both together)
1 cup Shredded Parmesan Cheese
1 /2 cup Shredded Asiago Cheese
1 (8oz.) Whipped Cream Cheese
1 Whole Garlic minced
1/2 bunch Cilantro for garnishing
1 lime
3 Tbsp. Montreal Steak Seasoning
2 Tbsp. Cayenne Pepper
2 Tbsp. Smoked Paprika
HOW TO PREP
Preheat your oven to 350 degrees
In an oven safe dish, empty out the cans of corn.
Add:
Shredded Parmesan Cheese
Asiago Cheese
Whipped Cream Cheese
Minced Garlic
Montreal Steak Seasoning
Cayenne Pepper
Smoked Paprika
Squeeze lime juice all over
Mix all the ingredients thoroughly and place in the oven for 30 minutes.
ENOY AND SERVE
Once out of the oven, let it cool for 5-10 minutes. Before you serve, garnish with the cilantro, and sprinkle some cayenne & smoked paprika!
